About Us
Republic opened in 2012 in the heart of Bloomfield Center as a new kind of gastropub within the MRG family of restaurants. Chef Steven Wolf, a Culinary Institute of America graduate with experience in kitchens from New York to Las Vegas, returned home with a simple idea: pair chef-driven food with the comfortable, social feel of a neighborhood pub.
The concept brought craft beer, boutique wines and small-batch bourbons together with elevated pub fare — familiar dishes approached with creativity, quality ingredients and a chef’s perspective.
More than a decade later, Republic continues to evolve while remaining rooted in that same idea: thoughtful food and drink, genuine hospitality, and a neighborhood gathering place that is proud to be part of Bloomfield Center. In 2024, Republic expanded with the addition of The Porch, a private dining and event space designed to bring that same experience to larger celebrations and gatherings.
